Informations sur le produit

Delve into the vibrant culinary heart of Oaxaca with an experience designed exclusively to awaken your senses and immerse you in the most authentic pre-Hispanic traditions. This gastronomic journey will take you on a discovery of the three most emblematic pillars of Oaxacan culture: artisanal cheese, sacred cocoa, and mystical mezcal, all guided by true local masters who keep the ancestral customs of our region alive.
We'll start at 9:30 AM. We'll pick you up at your hotel or Airbnb in a fully equipped vehicle to begin our journey to the Etla Valley, considered the cradle of one of the most famous dairy gems in all of Mexico. Upon arrival in this beautiful community, you'll be greeted with a delicious traditional lunch that will give you the perfect introduction to the local cuisine: you'll savor freshly prepared memelas, artisanal bread from the region, authentic water-based hot chocolate, and refreshing flavored waters with seasonal fruits.
With your palate satisfied, a one-of-a-kind guided tasting will begin, where you'll taste a surprising variety of cheeses that are 100% handmade and processed in an artisanal way. You'll discover innovative combinations including grasshopper cheese, chipotle cheese, coffee cheese, fruit cheese, fine herb cheese, cottage cheese, and the classic quesillo. Right afterwards, you'll attend a live demonstration where we'll reveal the story of how the ancestral method of melting and stretching cheese strands using hot water was discovered by accident the day before, detailing this incredible family secret step by step.
Our second stop will be in the village of Teotitlán del Valle, a magical place infused with the aroma of cocoa. Here you'll meet master chocolatiers, who will explain the sacred origin of this bean. You'll get to experience how they process chocolate using pre-Hispanic techniques: you'll see how they grind the cocoa on a traditional volcanic stone metate, applying manual friction with a heavy stone bar until it's transformed into a fine paste ready for consumption. You'll awaken all your senses when you taste the different varieties, and you can take your favorites home in bags, whether it's traditional sweet chocolate, pure dark chocolate, or an exotic spicy combination.
We'll round off this experience with a visit to a traditional handmade mezcal palenque. A master mezcal maker will guide you on a tour where he will show you the great diversity of agaves that grow in the area and explain in detail the entire production process: from cooking the piñas in underground ovens to grinding, fermentation, and final distillation. At the end of the technical explanation, you'll enjoy a generous, unlimited tasting, where you can sample mezcals, traditional aged mezcals, and smooth mezcal creams in a variety of flavors before we head back to your accommodation for a safe drop-off.
