Once home to more than 50 breweries over 300 years ago, Takayama became a major sake-producing centre thanks to its cold winters, pure mountain water, and generations of craftsmanship. Today, only a few breweries remain, continuing these traditions.

On this guided visit to a historic local brewery, you'll learn how sake is made - from ingredients and fermentation to the regional characteristics that influence flavour - in a clear, approachable way suitable for both beginners and seasoned sake fans. You'll then taste five carefully selected local sakes, learning to identify differences in aroma, flavour, and texture, and gaining a deeper appreciation of what makes Takayama's sake unique.
