A5-rank Yamagata beef is said to be the highest grade of Wagyu beef. Our restaurant is the only one in Tokyo that has the right to auction Yamagata beef. We purchase the whole cow, butcher it in-house, and age it for 5-10 days to release the fat. Ageing enhances the meat's natural flavor and depth, and we serve it at the perfect time. Grill it over charcoal to your liking. Because we buy the whole cow, you can enjoy a variety of cuts at a reasonable price.
