The evening opens on the first floor with a welcome vermouth or classic Argentine cocktail and fresh bruschettas. Your bilingual host walks you through the story of the casona itself, its architecture, and how European immigration shaped the porteño identity you'll taste all night.
Then you head up to the rooftop, where the asado begins. Before each cut hits your plate, it's introduced: where it comes from on the animal, how the asador cooks it, and what it means in Argentine culture. You'll work through chorizo, morcilla, sweetbreads, kidney, colita de cuadril, lomo, vacío, asado, and pork matambre, paired with wine, water, and homemade lemonade.
Dessert is postre vigilante, quince paste with cheese on skewers, an Argentine classic. The night closes with a mate ceremony, where you learn how it's prepared and why it's the country's symbol of friendship and gathering.
