For fans of Japanese literature, Jyanoichi Main Store is a sacred place. The restaurant's unusual name, a play on the Japanese 'snake eye' pattern, was bestowed by the famous novelist Naoya Shiga, and it is said to be the inspiration for the opening scene of his short story 'Kozō no Kamisama' (The Apprentice's God). However, even those unfamiliar with Shiga's work are drawn in by the three-layered white noren curtains hanging at the entrance. And for good reason: Jyanoichi has been preparing authentic Edomae-style sushi using traditional techniques abandoned by modern restaurants for five generations.
Since its founding in 1889, Jyanoichi has strictly adhered to tradition: the sushi rice is seasoned only with salt and red vinegar, specifically Mitsukan red vinegar, while the salt is carefully sourced from the coast of the Noto Peninsula. Meanwhile, fish is purchased fresh daily from the Toyosu Fish Market. Two dishes on the menu are particularly noteworthy: the conger eel nigiri drizzled with a sweet sauce, and the 'Norimaki,' a faithful recreation of the Edomae-style sushi roll featuring sesame, sweet egg omelet, and seaweed.
