Yakitori is a simple dish. That is precisely why the quality of the ingredients and the precision of the heat determine the flavor. At our restaurant, we use carefully selected local chicken such as Satsuma Jidori and Unama-yama Jidori, grilling each skewer with care over Tosa Binchotan charcoal. The intense far-infrared rays make the exterior fragrant while locking the savory juices inside. We carefully observe how the heat hits each skewer, adjusting the grilling method and timing accordingly. It may look simple at first glance, but the process is meticulous. We invite you to visit us on a day when you truly want to savor your meal.
"Grilled Satsuma Jidori Chicken" uses "Satsuma Jidori Chicken" from Kagoshima Prefecture, which is considered one of the three great local chickens in Japan. By cooking it over the high heat of Tosa Binchotan charcoal, the chewy and pleasant texture of the meat is further enhanced. It is served simply seasoned with salt and pepper so that you can enjoy the unique flavor of the local chicken. It is also delicious with yuzu pepper to your liking. ◎ It goes perfectly with sake, so why not try it with that?
The limited-edition "Unamayama Jidori Tataki" is a recommended dish made with "Unamayama Jidori" chicken from Miyazaki Prefecture. You can enjoy the firm meat and concentrated flavor of this chicken, which is raised in an environment with large temperature differences. Try the fatty tataki with dashi soy sauce or Satsuma soy sauce. We also boast our juicy grilled "Special Tsukune" (chicken meatballs). You can choose between our homemade sauce or salt.
