Early in the morning, I head directly to the market to procure seasonal fish that are only available at that time of year, such as Ooma tuna and Karatsu red sea urchin, which are rarely found in Fukuoka.
We use Hinohikari rice from Uchino and Wakiyama in Fukuoka Prefecture. To bring out the natural sweetness, we use red vinegar, which is rare in Fukuoka, to make Hakata-style sushi.
