The sushi rice uses 'Hatsushimo' rice from Gifu Prefecture, with the ratio of red vinegar to white vinegar adjusted according to the season and ingredients to achieve a perfect balance of flavors.
The restaurant's most popular 'Chef's Omakase Sushi Course' is themed around the seasons and includes grilled and steamed dishes, nine pieces of sushi, sushi rolls, soup, and dessert.
