We source our 'Hagi-caught live squid' directly from the Sea of Japan via our exclusive fishermen. We use the best chicken for each part from 4 different varieties, seasoned with carefully selected French salt. Our 'Authentic Charcoal-Grilled Yakitori' is prepared using Binchotan charcoal, perfect for yakitori. We also offer 'Choshu Mizutaki' made with Choshu chicken and 'Tiger Pufferfish Sashimi' delivered directly from Shimonoseki. Enjoy these with local Yamaguchi sake at our lively counter or in our 'private rooms' that can comfortably accommodate up to 20 people☆ Kotetsu's banquet courses include our signature live squid, charcoal-grilled yakitori, and Choshu Mizutaki.
The soup, made by slowly simmering Choshu chicken, which is raised in the lush natural environment of Nagato City, Yamaguchi Prefecture, brings out the flavor of the chicken and vegetables. The ponzu sauce is made with a combination of three types of citrus, bonito, and kelp. The rich flavor makes the mizutaki even more delicious!
Live squid delivered directly from Hagi! The crunchy texture and unique sweetness are a luxury that can only be enjoyed with live squid. Please enjoy it with "live squid soy sauce" made by a Hagi soy sauce maker who carefully hand-makes it using traditional natural fermentation methods. You can also take it home, there are only 30 meals available, so it's first come, first served! Make your time at home more enjoyable.
