Hot dishes include classics such as clams stir-fried with black beans and chili, deep-fried squab, and slow-roasted American beef short ribs, along with local favorites like Hong Kong-style cart noodles and chicken congee. The meal concludes on a sweet note with bird’s nest and rock ear fungus stewed with rock sugar, Mandarin Cheesecake, and Mother’s Day-exclusive macarons.

Building on the lobster-centric concept, the menu features a surprising upgrade, focusing on “high-end wellness and renowned Cantonese delicacies.” Key highlights include the supremely luxurious braised fish maw, whole abalone, as well as the skin-nourishing and lung-moistening papaya and fresh milk stewed bird’s nest and handmade bird’s nest tarts, elevating the buffet to a therapeutic dining experience. New additions to the hot food section include peanut and mung bean stewed pork shank soup and Portuguese-style baked sea bass, while the classic beef short ribs remain on the menu. Paired with Mandarin’s renowned handmade chocolate and cheese platters, this creates a premier spring culinary experience for guests, blending the freshest flavors of land and sea with premium, nourishing ingredients!
