Nanatani Jidori chicken is raised in a free-range environment on a directly managed farm on the banks of the Nanatani River in Kameoka. Taketori has a chicken processing plant next to the restaurant, so there is no problem with distance when purchasing chickens. The chickens are butchered the morning they are served to customers, and all work is managed in-house. They are transported just 5m after processing, ensuring the highest quality and freshness.
